As a 100% Italian im a sucker for anything sweet like this. Alot of places add chocolate chip cookies to the cream mix but I find it to take away from the sweet taste of the filling. I prefer to powder mine with chocolate powder or a cherry or strawberries on the ends.
Recipe
2 lbs. ricotta cheese
1 1/2 c. powdered sugar
4 tsp. vanilla
12 oz. chocolate morsels
1 1/2 c. powdered sugar
4 tsp. vanilla

This will roughly make enough for 18-25 Cannolis depending on how much cream you put in each. I prefer to buy the shells from my local Italian bakery. They make them alot better then I do and a great tasting filling makes the cannoli what it is.
I saw a great take on the classic on food network. Cannoli parfaits. I've not gotten around to trying this but it looks like a great take on the classic cannoli.
